Resumen

The project Festivities and Flavors of Ecuador is a result of clamor in obtaining a proper identity as an ideal Equatorial destination. It is a consequence, of disinterested work to culturally reclaim our culinary and ancestral traditions. This is how the program Rescuing the Traditional Flavors of Ecuador mission was executed by the Universidad de las Americas Laureate International Universities; a searches with the objective of reaching out to all the star products of our nation, such as, shrimp, cacao, coffee, banana, roses, strawberries, and tuna. Along with hundreds of other products that are part of this jungle of exotic and endemic goods, such as, traditional guinea pig, lupine beans, the quinoa, potato, corn, chamburo, chontaduro, badea, ovo, grosellas, mortino, black cherries, which are amazing products that coexist and are present during the entire year in the land of Cinnamon and Aji. Therefore, many of these products that originate in our land are exported all over the world, hence, achieving a world-wide culinary transformation with such exquisite products of ours. The troops of this new Andean-Ecuadorian cuisine are personages that have toiled over years and years, with persistence, love and a dream for our nation. They have contributed so that our new generations can observe our nation that is so rich is products and traditions with a different perspective. We want to give thanks to all the valuable contributors, such as, educators, investigators, doctors, chefs, enologists, coffee experts, hotelkeepers, photographers, business people, tourists, producers, and inhabitants of this land. All of whom have definitely become the absolute owners of our traditions. Ecuador is known for its beneficial geographic location. Due to its success and achievements of powerful and creative pueblos, such as, the caras, shyris, quitus, cayambis, otavalos, tsachilas, yumbos, huancavilcas, mantas, paltas, canaris, and panzaleos. Amongst many more pueblos, whom for more than 8,000 years have achieved to transmit from generation to generation the magnificence of their feasts, foods, and traditions. Music, traditional dishes, and beverages are requirements in every feast of our nation, there are always two or three times during the year where in every corner of Ecuador special celebrations take place. It may be a celebration in honor of district foundation, a remembrance of historical achievements, independence, pagan feasts, worldly feasts, religious, or a mix of repressed religion with ancestral customs. With this project we attempt to collect the most important festivities and foods of Ecuador, from north to south and from Carchi to Macara. Recipes are a transcription of the significant aspects that feast integrants generously reveal, recipes that are consumed at homes with the motive of celebrating emotional occasions. We have added an international point format, wherein HACCP is included with a nutritional description for each and every culinary secret recipe. To live the festivities of Ecuador constitute a reaffirmation of our nations conviction as a festive and culinary destination, with a lot of worldwide potential. So that each and every visitor, being either local or foreigner, can live the explosion of dances, colors, music, foods, and beverages. All of which are part of the most beautiful and amazing natural views of our Andean Sierra, Coast, Amazon, and Insular region. Visiting our nation amidst the festivities, is to enjoy during the entire year of the most superior beauty of its natural views, delighting people with the most varied and abundant cuisine, of its picturesque dances, and the aroma of its most tasty ancestral beverages. In conclusion, it is a complete feast of colors and flavors that this small Patrimonial Treasure of Humanity provides it is called Ecuador.
