This article is a preview of a study about the impact of migration and tourism on cultural heritage. In this work we focus on the contribution of immigrants in food practices to the Costa Rican population. The purpose is to know the representative meals of the migrants and to know what are the mechanisms to reproduce them in Costa Rica. The Costa Rican culture was shaped by the contribution of Amerindians and migrants from all continents, among which are Chinese, Italians and Afro-Caribbean island peoples, who arrived in different waves during the second half of the 19th Century. In recent years, the largest number of immigrants came from Nicaragua and Colombia.
