Resumen

In the present work I analyzed the practices that are developed in the regional kitchen and that are constructed by means of the gustatory memory of the panamazonicos that live far from Leticia and the triple frontier, and how these influences in its construction and identity reinforcement. The research starts from a theoretical basis provided by the anthropology of food and migration contexts in the sense of change of place and a cultural exchange. The remittance and the regional cuisine are the central axis of the investigation. What is tried to demonstrate is that, material objects, with symbolic meanings, contribute to the identity construction of young people who need leaving their homeland (for academic or work purposes) and adapt not only to a different lifestyle but a different culinary. The family help to not forgetting their origins. These remittances are constituted by foods and typical family recipes, ingredients that have allowed to create a regionality in the city of Leticia. The intention is to give a different representation to the cities and people living in the Amazon region, with the intention of showing practices and knowledge and how they contribute to social phenomena that frame individual and collective processes. Finally, I intend to account for the construction of identity considering the frontier context. With the intention of contributing to a better understanding of how identities are constructed through food (at the individual and national levels), considering the role of memory and the creation of affective ties and reciprocity in translocal situations.
